1. Combine 45ml Whiskey, 30ml fresh beetroot juice, 20ml honey syrup and 20ml fresh lemon juice in a cocktail shaker filled with ice.

2. Shake vigorously until the shaker is cold.

3.Strain into a chilled cocktail glass.

4 Garnish with a sprig of fresh tarragon and sip your beets!
